Region - Clare Valley, South Australia

Vineyard - The fruit for this wine was sourced from the Tullymore vineyard in the North eastern foothills of the Clare Valley. This vineyard has produced medal winning wines ever since the first crop. Grown on deep red loam and quartz volcanic rock on east facing slopes with an elevation of 450 meters makes this one of the best sites in Clare to grow Cabernet Sauvignon.

Growing Conditions - Excellent ripening conditions prevailed in the Clare Valley this vintage. Warm days and cool nights allowed steady flavour development and acid retention. Good winter rains followed by a warm spring set the vintage up for near perfect conditions. A January heatwave nearly undid all the great lead up until 90mm of rain fell slowing ripening down and returning the very favourable growing conditions that has led to this fantastic wine.

Winemaking - All parcels of the Tullymore vineyard received a 5 day cold soak in open top fermenters in order to softly extract the dark and brooding characters of the berries. Fermentation occurred at low temperatures over a 5 day period in order to retain aromatic intensity. A temperature spike was utilised on day 3 to extract soft round tannins. The ferment was regularly pumped-over to maximise colour, flavour and tannin extraction from the skins. The wine was pressed off to a selection of 35% new French oak and 65% second use French and American oak hogsheads. The wine spent 20 months in oak and after went through a rigorous barrel selection prior to blending.
Winemakers tasting notes - The colour is deep purple with brooding black red hues. The nose shows lifted aromas of black bean sauce, fresh cut violets, black olive tapenade and hints of cedar. The nose is extremely complex and forms multiple layers. The palate opens up to a myriad of flavours that funnel down to a long savoury tannin based backbone. The wine is superbly structured, has fantastic energy and directional flow. Flavours of coffee and mocha over olive tapenade, black sauce and cassis dance and open up as the wine enters the mouth.  A great wine of an exceptional vintage.
The fruit expression in this wine is directly descendant from this famous vineyard. As winemakers we aim to preserve the amazing and concentrated fruit flavours through minimal intervention. The French oak used helps balance the tannins whilst not over powering them.
